- The collection of SHABO grape vodka is based on selected grapes of the Muscat Ottonel, Rkatsiteli, Riesling, Sauvignon Blanc and Chardonnay varieties. The vines were purchased in Europe, taking into account the characteristics of Shabo soils and planted on the mini-plots of the terroir that are best for them. In order to create a product of exceptional quality, the number of grapes on each vine is reduced to 2 kg.
Grapes are collected manually in boxes. After only 15 minutes, they are delivered by refrigerators to the production facility, the equipment of which is one of the best in Europe.
The recipe for creating this noble high-quality drink was developed by the winemakers of the SHABO company. Grape Vodka undergoes triple distillation followed by filtration for each type of product on the appropriate filters: diamond, gold or silver. - AXIOM X.O. – a respectable cognac for people who understand premium drinks.
This is the first vintage cognac from the new SHABO collection, entirely born from the Shabo terroir.
It has a complex and unique taste, thanks to the long 6-year journey: from berries growing along the banks of the Dniester estuary to bottling.
AXIOM X.O. created exclusively from Rkatsiteli grapes, which we collected from the best areas of the Shabo terroir. Next, we turned the berries into a high-quality brandy wine and sent it to a Charente-style still for distillation.
SHABO cognac masters have selected the best middle part of grape alcohol - the "heart" - and sent it to French Limousin oak barrels for many years of aging.
For at least 6 years, grape spirit revealed the varietal characteristics of Rkatsiteli grapes in oak: subtle notes of spices, violets and linden. All these years, oak saturated it with a thick vanilla-chocolate and resinous-nut bouquet.
As soon as the brandy alcohol reached maturity, the craftsmen stopped the aging process and created an exclusive blend of AXIOM X.O. cognac, which additionally "rested" in oak.

• The highest quality viticulture practices are applied during whole year to obtain the greatest potential in the grape and express as maximum as possible the Shabo’s “Terroir” potential in the grape.
• Chardonnay grape tasting with chemical analyses defines the best moment of the harvest. Grape is harvest by hand in the boxes . Grape bunches pass sorting stage and pressed in fully controlled atmosphere press Vaslin Bucher Inertys, without any oxidation. Only the highest quality free run juice is selected . Grape must is partially fermented in French and Austrian Oak barrels with individual barrel temperature control, and another part ferments in stainless steel tanks and both part pass aging process on fine lees . Very accurate blending stage is realized .
• After secondary fermentation into the bottles (Classical Champenoise Method) wine passes aging process on fine lees .

Grape must is fermented in French and Austrian Oak barrels with individual barrel temperature control, therefore wine is aged at fine lees. Tasting defines duration of the aging.

Finally only the best quality selected berries are transferred in Oak Tanks for fermentation. Smooth extraction with different methods are used during fermentation and finally wine passes post fermentation maceration stage for maximum complexity and style diversity. Malolactic fermentation is fully done in different type of French oak barrels. Barrel aging duration is different and depends on the potential of the wine every year.

The rich, complex and elegant Saperavi from the 2014 vintage of the Iukuridze Family Wine Heritage collection has a deep ruby red colour with purple hues. After 6 minutes of decanting, it shows ripe notes of blackberry, blueberry, menthol, eucalyptus, perfectly balanced with elegant notes of oak. The tannins are supple, and the finish is persistent with a dominance of ripe fruit.
