We ferment with maceration on skins for a month in the amphora, then the aging continues for 12 months in the same amphora, on its lees, under a light flower veil. They are amphorae / clay jars with more than 200 years of old from the zone, with capacities between 800 and 1500 litres.
It is a mid-depth wine. With a seductive fruit nose. Attractive tension in the mouth and extremely mineral profile. It has a multitude of pairings.

It is ecological and made only with Viognier, variety considered the queen of the white ones, of difficult viticulture but exceptional results.
We harvest the grapes by hand in mid-August, in vine stocks with more than 20 years, on trellis and strict dry land. On slopes with a loam clay soil where the red slate predominates.
We destem all the grapes, and crush them gently. They ferment in a stainless tank of up to 2,000 l. with a controlled temperature of 20ºC. They rest on its fermentation lees for 4 months in inox tanks. We filter it lightly and it remains in the bottle for a minimum of 2 months.
It is a greenish yellow wine, very aromatic, tropical and exotic. It is pure banana with mineral notes. Fresh, broad and voluminous. It has good natural acidity and many pairings.

It is organic and we make it with Tempranillo. The conjunction of the southern climate, the 700 m of altitude, the low production and the superficial slate implies obtaining a wine full of character.
We hand pick grapes that come from old vineyards, abandoned for years and that we ourselves recovered. They are goblet-pruned vine stocks reconverted in low trellis vines, in strict dry land and a very poor and dry ground.
We ferment with the skins in tanks between 400 and 800 litres and punch down by hand twice a day, without temperature control. It ages in French and American oak barrels for 12 months. 20% of the barrels are new and the rest are up to five years of use.
It is a wine with ripe fruit, licorice and a touch of peach. Concentrated character with marked tannin and lactic notes. Fluid, fresh and mineral. It has a multitude of pairings.

製品特徴 / Product Features: Zalema and Muscat D'Alexandrie Orange Maceration Wine crafted following a traditional recipe from the centuries-old Pinzón de Moguer Wineries. This unique wine is the result of a collaboration between Privilegio del Condado Wineries and the COBELLA cooperative from Lepe, which contributes its best varieties of oranges, whose peels are macerated in alcohol that will later be added to the Moscatel grape must. This wine is aged through oxidative aging using the traditional system of criaderas and soleras for 24 months.
Of orange mahogany color, very bright and clean. Highly aromatic and persistent. It presents clean and deep aromas, with a markedly floral character (orange blossom and jasmine), and toasty notes from the barrel. Silky and sweet. Upon tasting, floral aromas return with hints of caramel; it is persistent and complex. Very long in the retronasal passage. An ideal companion for desserts and sweets. Surprisingly delightful in cocktails.

製品特徴 / Product Features: Sweet wine obtained from a meticulous selection of Moscatel de Alejandría and Zalema grapes, harvested late to achieve a high level of sweetness, where the added alcohol to fortify the must has been previously macerated with dehydrated lemon peels, from a blend of Eureka, Verna, and Fino lemon varieties, which impart very unique citrus notes. Subsequently, the wine is aged in American oak barrels for 4 to 6 months, to round out and refine the added alcohol. This type of wine is unique in the world, being a derivation of the Orange Wine from the Condado de Huelva, which has an exclusive Designation of Origin. This wine is born as a tribute from the winery to the long career of the two foremen of the cooperative in the year of their retirement, hence the name Experience, which plays on the completely different experience of drinking a lemon wine and the experience accumulated over more than 40 years of dedication to our winery.
With a silky appearance and texture, and a yellowish color with greenish reflections, it is very aromatic and persistent. The freshness of a subtle and elegant lemon stands out, reminiscent of orange blossom. Subsequently, herbaceous notes typical of the Verna lemon variety emerge, and after a few seconds, the lemon gives way to some floral notes typical of Moscatel de Alejandría, such as jasmine. On the palate, it is silky and slightly sweet, but not cloying, with very high acidity that provides a lot of freshness and completely cancels out the sweetness. On the aftertaste passage, the lemon and orange blossom aromas reappear, along with a slight final bitterness, making it a very persistent wine with a multitude of nuances.
